Saccharin - a zero calorie synthetic sweetener. Saccharin, the oldest of the non-nutritive artificial sweeteners, is currently produced from refined, synthetic methyl anthranilate, which is a chemical occurring naturally in grapes. Saccharine is 300 times sweeter than sucrose, heat stable, and does not cause tooth decay. It is durable under storage, although it leaves a slightly bitter aftertaste. It is neither digested nor stored by the human body, but quickly eliminated in urine.
Lecithin - a waste product of the refining of soybean oil and is also present in spinach, nuts, eggs yolks, and red meat. Since many years, lecithin has been utilized in commercial food processing as a natural emulsifier and lubricant. Lecithin is a source of choline when digested, and is a key constituent of the lipoproteins that transport cholesterol molecules and fat through the blood. Lecithin (choline) promotes synthesis of HDLs (high-density lipoproteins) - also referred to as `good` cholesterol - by the liver, when it is part of the human dietary intake.
